Instant Pot Salisbury Steak With Guinness Gravy

Comfort food in 30 minutes!

Equip!

3 tbs. oil
2 medium onions, thinly sliced and quartered
8 oz. mushrooms, coarsely chopped
1 1/2 lb. ground beef
1/3 c. bread crumbs
1 egg
3 tbs. milk
1 12 oz. bottle Guinness
1 tbs. Worcestershire sauce
1 tbs. tomato paste
1 c. beef broth
2 tbs. deli-style mustard
1/2 c. milk
3 tbs. flour

Prep!

Slice the onions thinly and quarter the slices.

Coarsely chop the mushrooms.

Mix the ground beef, bread crumbs, egg and 3 tbs. milk until well combined. Divide and shape into 6 thick patties about 4 3/4 oz. each.

Whisk the Guinness, tomato paste, beef broth and mustard in a large measuring cup.

To save time and eliminate waste, spray a silicon ice cube tray with oil, put 1 tbs. tomato paste in each section and freeze. Transfer frozen cubes to a freezer bag and keep frozen where they’ll be ready when you need them. They’ll quickly thaw when added to warm liquid or in the microwave for 20 seconds at 50% power.

Combine the 3 tbs. flour into 1/2 c. milk.

Cook!

Set the Instant Pot to sauté and heat the liner. Add 2 tbs. oil.

I use coconut oil, but any good quality oil will do.

Sauté the onions and mushrooms 5-6 minutes until tender. Set aside.

Canned mushrooms (stems & pieces) are fine. Just add them to the pot after the onions have started to soften.

Heat the remaining 1 tbs. oil. Brown the beef patties 2-3 minutes per side. Set aside.

Deglaze the pot with the Guinness mixture.

Return the onions and mushrooms to the pot. Lay the beef patties on top of the onions in a single layer.

Seal the lid and cook on high pressure for 15 minutes. Allow to natural release for 10 minutes.

Release the pressure and remove the patties to a platter.

Set the Instant Pot to sauté and whisk the milk & flour mixture into the cooking liquid. Bring to a boil and cook until it thickens slightly.

Return the beef patties to the pot and coat with gravy.

Finish!

Serve on a bed of mashed potatoes or noodles.
